2016 Schild Estate Barossa Valley Merlot
- Barossa Valley

2016 saw warm and dry conditions throughout most of growing season, but without any significant periods of severe heat. Yields were low and many red varieties ripened evenly, with great flavour depth and some firm prominent tannins which have softened well during maturation. As a result, many of the wines from the year show great structure and framing when young and look to have the ability to genuinely age well too.
Intense lifted aromas of dark plums dominate and are supported by fresh hints of fresh cherries and dark chocolate.
The flavours of plums and dark berry fruit evident on the nose are clearly also evident on the palate, but here they are balanced by a subtle fine tannin framework around the edges which provides a clear path of travel to the wine. A hint of spice appears to provide some added interest as the soft dark fruit rolls through to the finish.
- Winemaking Notes
The 2016 Merlot was sourced from high on the eastern edge of the Barossa Valley off our Angus Brae and Three Springs vineyards. Here, sheltered hillsides and cooling afternoon gully winds coming down from Eden Valley, temper the warm Barossa sunshine and ensure conditions are ideal for ripening Merlot.
Harvested in the cool of the early hours, the fruit is crushed to traditional open top fermenters where a combination of soft handling techniques are used to try and obtain a balance between the plush round textural qualities so often associated with Merlot and some interest and structure from work on the soft tannins.
