2017 Schild Estate Barossa Valley Merlot

Deep, bright, dark ruby in colour with intense lifted aromas of crunchy, brambly dark berry fruit. Aromas of blackberry, plums and winter hedgerows dominate and are backed up by savoury glimpses of licorice and spice. A soft and pillowy attack of creamy dark plums and chocolate is supported by a super fine tannin structure working around the edges and providing a clear frame and focus in which the ample fruit sits. A hint of spice appears to provide some added interest as the wine works its way through a clear line of travel finishing long and focused.

Winemaking Notes

This wine is fermented in stainless steel open fermenters before undergoing secondary malolactic fermentation in new and seasoned French oak hogsheads. There is a focus on minimal handling and the use of oak for structural framing rather than imparting significant oak flavour. The wine is matured for 12-14 months in barrel before usually undergoing a light filtration and fining if deemed appropriate prior to bottling.

Harvested in the cool of the early hours, the fruit is crushed to traditional open top fermenters where a combination of soft handling techniques are used to try and obtain a balance between the plush round textural qualities so often associated with Merlot and some interest and structure from work on the soft tannins.

Growing Conditions

Decent amounts of replenishing winter and spring rain was followed by mild
December and January temperatures. All of this ensured favourable ripening conditions, a measured pace to proceedings and a later start to harvest than recently seen. As a result, the balanced development of sugar and flavours in the fruit along with the retention of natural grape acid were the order of the day and ensured the resulting red wines from the region in 2017 look layered and pretty.
